Here's a simple recipe for Jamaican hominy corn porridge:

Ingredients

1 cup hominy corn (dried)

4 cups water (for cooking the hominy)

2 cups coconut milk (or milk of choice)

1/4 cup sugar (adjust to taste)

1/2 teaspoon salt

1/2 teaspoon vanilla extract (optional)

Ground cinnamon (for garnish)

Grated nutmeg (for garnish)


Instructions

1. Prepare the Hominy:

Rinse the hominy corn under cold water.

In a pot, combine the hominy and 4 cups of water. Bring to a boil, then reduce to a simmer. Cook until the hominy is soft (about 1-2 hours). Add more water if necessary to keep it from drying out.



2. Blend the Mixture:

Once the hominy is cooked, let it cool slightly, then blend it with some of the cooking liquid until smooth.



3. Cook the Porridge:

In a large pot, combine the blended hominy mixture, coconut milk, sugar, and salt. Stir well and cook over medium heat, stirring frequently until it thickens (about 10-15 minutes).



4. Flavor and Serve:

Add vanilla extract if using, and stir to combine. Adjust sweetness if needed.

Serve warm, garnished with a sprinkle of ground cinnamon and grated nutmeg.
