We’re back for more (because it’s so darn gooood!) here on Dancing in the Kitchen, continuing with our “Simple Healthy Breakfasts KIDS WILL ACTUALLY EAT” theme.
And today…. We’re discussing the health benefits of (and myth-busting) the mighty oatmeal! While (usually) gluten-free (unless processed in a facility that also processes gluten-containing grains), and full of fiber to slow sugar absorption, oatmeal (and sugary toppings) can still spike blood sugar… So we consider it a bit of a mixed bag when it comes to its health-promoting benefits. However, it certainly CAN have a place in a healthy diet when consumed in moderation and (pro-tip) when consumed with some added protein and healthy fat (to slow sugar absorption even more)…
And that’s where we get to this week’s fun breakfast recipe… Cookies for breakfast?! Yes, really. At least cookies like this… Just once in awhile. And maybe just one with some scrambled eggs as your main.

RECIPE: Cranberry Raisin Oatmeal Breakfast Cookies
INGREDIENTS:
1 cup all purpose flour
1/2 teaspoon ground cinnamon
1/2 tsp baking soda
1/3 tsp salt
1 1/2 cups rolled oats
1/2 cup unsalted butter, room temperature
1/2 cup packed light or dark brown sugar
1/3 cup granulated sugar
1 large egg
1 tsp pure vanilla extract
1/2 cup golden raisins
1/2 cup cranberries
1/2 cup chopped walnuts (optional)
1/2 cup dark chocolate chips/chunks (optional)
1/2 cup shredded coconut (optional)
*you can also add a bit of hemp, chia, and/or flax if desired
PREPARATION INSTRUCTIONS:
Combine dry ingredients (flour, cinnamon, baking soda, salt) in a small bowl and set aside.
In a large mixing bowl, use an electric mixer to beat together butter, eggs and vanilla.
Add sugar to butter mixture and continuing mixing until combined.
Add the dry ingredients a little bit at a time until combined.
Stir/mix in oatmeal.
Add raisins, cranberries, walnuts, chocolate chunks and shredded coconut, and fold in until evenly distributed throughout dough. You can also add a bit of hemp, chia and/or flax if desired.
Drop 1 Tbsp dough balls onto baking sheet and press down slightly to flatten.
Bake cookies at 350 degrees for about 13 minutes or until light golden brown.
Remove from oven, let cool, serve and enjoy.
