INGREDIENTS
2 cups aged long grain basmati rice https://amzn.to/3eaFXZN

2 tbsp neutral oil such as grapeseed or avocado https://amzn.to/2DrZYyx

1 medium onion thinly sliced or chopped

3 cloves garlic crushed (optional)

½ tsp whole black peppercorn

2-3 sticks cinnamon stick

3 small black cardamom

whole black peppercorn 1/2 tsp

Star Anise 2

Whole cloves 5

Fennel seeds 1/2 tsp

Fenugreek seeds 1/2 tsp

Onion seeds or kalonji 1/2 tsp

2 cups of chickpeas rinsed and drained_canned 2 (15 oz)

2 tbsp leveled salt or to taste

2 cups of water

KHEER
INGREDIENTS
-1/2 cup basmati rice, washed and rinsed
-4 cups whole milk or full-fat coconut milk
-½ cup sugar, adjust to taste
-½ teaspoon ground cardamom, adjust to taste
-Pinch of saffron
-Crushed nuts (pistachios, almonds, or cashews) 2 tbsp
-Golden Raisins 1 tbsp
INSTRUCTIONS
1. Rinse and drain the rice and set aside.
2. Press the sauté button and add rice and butter to the pot, saute for 30 sec
3. Pour the milk into the pot then add sugar, stir.
4. Secure the lid, close the pressure valve, and cook for 20 minutes at Manual/high pressure or porridge mode.
5. Naturally, release pressure.
6. Add heavy whipping cream cardamom powder and saffron shredded coconut to the pot. Stir until well combined. add chopped nuts. The kheer will thicken as it cools. If you prefer a thicker pudding, press sauté and stir until desired consistency. (if you like your kheer runny) Add 1/2 cups of milk (depending on the consistency you like)
Serve this dessert hot, warm, cold, or at room temperature. Top with nuts and raisins prior to serving!!
