In retrospect, this would have been the perfect project to learn Vacuum bagging, as I could have laid up the rudder on both sides and fit the whole thing into a single bag to really get the two sides connected to each other.
Also, just vacuum degassing the epoxy resin may have helped.

You'll have to wait for the part 2 video to see the final results. Certainly better than when I started, but there were a few pieces of fiber that were not fully wetted out, leaving a few white spots (air bubbles trapped near the fiber?). I'm hopeful that Vacuum bagging would have fixed all my (minor) problems....but maybe the issue is with the worker, and not the tools....
