Japanese Milk Bread
Ingredients
For Sweet Stiff Levain
25g Active Levain
25g Water
50g Bread Flour
10g Sugar
* I made sweet stiff levain before I went to bed*
For Dough (Next day in the morning)
All Sweet Stiff Levain
230g Bread Flour
30g Sugar
10g Milk Powder
4g Fine Sea Salt
1/4tsp Instant Dry Yeast
45g Milk
50g Water
1 Whole egg
25g Unsalted Butter (Softened) l
For Egg Wash
1 Egg yolk
1 tsp Milk

Bake at 350 F° without fan mode for 30-35 minutes. (Make sure preheat oven at least for 45 minutes)
Tips
* Cover with foil on top while baking to prevent the loaf from getting too dark when it reaches your desired color.*
