Japanese sweet potato (satsumaimo) is in season, so here are three different ways to prepare it! It is purple on the outside, pale yellow on the inside, it’s very versatile lending itself well to different cooking methods. In this video I’ll show you how to steam it with rice, simmer with chicken and candy it as daigaku imo.

Takikomi Gohan:

Ingredients 3-4 servings:

Takikomi Gohan
1 sweet potato
2 JP cups of rice (1.7 US cups)
1 tbsp each of mirin, sake, soy sauce
400ml (1.7 US cups) of water
Sesame seeds

Simmered Pork & Daikon
1 sweet potato
1 chicken thigh
1 carrot
3-4 shiitake mushrooms
1 knob of ginger
1 tbsp of mirin
1 tbsp of sake
2 tbsps of soy sauce
1 ½ tbsp of sugar
400 ml of water
Sesame seeds
Green onions

Daigaku Imo
1 sweet potato
3 tbsps of sugar
2 tbsps of mirin
1 tbsp of soy sauce
1 pinch of salt
Black sesame seeds
Oil for frying
