📝 Ingredients

🌿 For Ragi Wrap Dough:
• 1 cup ragi flour
• ½ tsp salt
• 2 drops oil or ghee
• ¾ to 1 cup water (for boiling)

🧀 For Thecha Paneer:
• 150–200g paneer (grated or crumbled)
• 3–4 green chillies
• 4–5 garlic cloves
• 5–6 curry leaves
• A handful of fresh coriander
• Salt to taste

🫑 For Veggie Stuffing:
• ½ cup capsicum (sliced)
• ½ cup bell pepper (any color, sliced)
• ½ onion (sliced)
• 1 tsp oil
• Salt to taste
• ½ tsp oregano

🥣 For Cashew-Garlic Dip:
• 10–15 soaked cashews (soaked 1–2 hours or in hot water for 15 mins)
• 2 tsp hung curd
• 3–4 garlic cloves
• ½ tsp oregano
• ¼ tsp chilli flakes
• Salt to taste

🍽️ Recipe

🔹 1. Ragi Wrap Dough:
1. In a pan, bring water to a boil.
2. Once bubbles appear, add 2 drops oil and salt.
3. Lower the flame, add ragi flour gradually while stirring.
4. Mix well until it forms a dough-like texture.
5. Cover and let it cool slightly, then knead into a smooth dough.
6. Roll into thin wraps and cook on a tawa (no oil). Set aside.

🔹 2. Thecha Paneer Filling:
1. Dry roast garlic, green chillies, and curry leaves in a pan (no oil) for 1–2 mins until slightly charred.
2. Transfer to a blender, add coriander leaves and salt, and grind into a coarse paste.
3. Mix this paste with grated paneer. Keep aside.

🔹 3. Cashew-Garlic Dip:
1. Blend soaked cashews, hung curd, garlic, oregano, chilli flakes, and salt into a creamy paste.
2. Add 1–2 tsp water if needed for a smooth consistency.
3. Chill before serving.

🔹 4. Veggie Stuffing:
1. Heat 1 tsp oil in a pan.
2. Add sliced capsicum, bell peppers, and onions.
3. Sprinkle salt and oregano, and toss on high flame for 2 minutes.
4. Keep aside — veggies should stay slightly crunchy.

🔹 5. Assemble the Wrap:
1. Take a ragi roti and spread a layer of the prepared thecha paneer.
2. Heat a pan with a few drops of oil. Place the paneer-side-down wrap and cook both sides until lightly crisp.
3. Repeat for all wraps.
4. Once done, spread a layer of the cashew-garlic dip on the cooked paneer side.
5. Add the sautéed veggies.
6. Fold or roll the wrap — ta-da! Your healthy, delicious ragi wrap is ready!
