We used half of the ingredients below for a small pot. The recipe below can feed 6-8 people easily.

DRY & WET INGREDIENTS PROTEINS
7 oz crab paste
1 small jar crab paste
1 small jar shrimp paste
8 oz hot and sour paste
2 cans of coconut milk
1 small minced prawn in spice
1 small minced crab in spice
1/4 cup vinegar
4 tbsp Chinese BBQ or Satay sauce
3 tbsp sugar
3 tbsp chicken soup mix
2 tbsp fish sauce
2 tbsp cooking oil
2 tbsp minced garlic
Fill 8 qt stock pot 3/4 of the way

2-3 lbs. oxtail
Beef
Shrimp
Enoki mushroom
Squid
fish balls
Quail EGGGGS!!!

Chinese broccoli
Vermicelli
Crispy tofu skin
Morning glory
Bok Choy
Pineapples (special)

Directions

Blanche the oxtails for a few minutes to get rid of the impurities
-Then boil for an hour. (Instapot works)

-Before combining sauces, drain the oil sitting on the top of it.

-Fry garlic and shallots in oil
-Add satay sauce and stir in
-Add minced crab & prawns. Continue stirring
-Add in rest of jars and continue to stir in.
-Stir all sauces for about 5 minutes

-Add chicken soup mix
-add sugar
-add vinegar
-After 5 minutes, add the coconut milks
-simmer another 5-10 minutes until all flavors mixed

TASTE!!!!

-Make sure oxtails are tender and add in the stir-fried sauces and bring to boil.

Not sure how this magic spell of a recipe came about but the yao hawn blend soup should be very rich as it will get dissolved as meat and vegetables are cooked in the soup.

The broth should be hearty, salty, and a bit spicy.

Hot pot always brings back memories of my parents and their friends gathered around a table covered in newspaper. Kids can’t sit at the main table so mom would always make a little bowl for me. The adults would drink their Budweiser and Hennessey.

HOT POT is communal and everyone gets to help themselves. A little bit of prep work but always a holiday favorite.
