A Malaysian dish that is served as breakfast and also as a snack. It is a reminder of my childhood when we used to have it from street vendors.
It is quite easy to prepare and the sweet coconut topping compliments the sticky glutinous rice which is worth trying.
I used glutinous Thai rice. Glutinous rice does not contain gluten as the name implies.

Ingredients :
1 cup glutinous rice
Wash and soak it in water overnight
3/4 cup coconut milk
1/2 tsp salt
2-3 pandanus leaves cut into 4 inch length

For the topping:
1 cup grated coconut
1/2 cup palm sugar syrup
1 tbsp cornflour
1tbsp water
1 large banana leaf, washed and wilted, for lining the steaming rack.
6 banana leaves - 6X7 inch
Washed and wilted

Method:
1. Drain the glutinous rice, add the salt and mix together

2. Fill water in the steamer and heat it on medium flame.

3. Line the steaming rack with the wilted banana leaf, put the pandanus leaves and place the rack on the steamer.

4. Transfer the rice to the rack and pour the coconut milk over it.

5. Cover and steam it for 20-25 mins.

6. Once the rice is translucent and cooked, stir it and pour a
few tbsp of coconut milk, mix it,
cover and cook for 2 more mins,remove from the flame.

The coconut filling:
1. Cook the coconut and palm sugar syrup with the pandanus leaves over low flame till the liquid is absorbed.

2. Add water to the cornflour and mix it, add to the coconut, stir and turn off the flame.

3. Next, take a wilted banana leaf, put 2 tbsp of the glutinous rice, and top it with 1 tbsp of the coconut filling.

4. Fold both sides of the leaf to the middle, then fold down both ends underneath to make a triangle package.

5. Serve the Pulut Inti while still warm.

Note:
*To wilt the banana leaves:
Microwave for 10 seconds each leaf or blanch it in hot water.
