So sometimes, we have cooking/baking fails....this is definitely classified as one of those. This was just a really off day, but we're nothing if not our authentic selves, so here you go, and hopefully if you make this, it turns out better than mine did. Below is the RIGHT way to make it! Keto Chicken Tetrazzini Casserole
Ingredients
1 and 1/4 cups keto friendly noodles https://amzn.to/3mosbdR or https://amzn.to/383bdZY
2 cups pre-cooked chicken, shredded or cut up in cubes
1/4 cup diced, canned pimento https://amzn.to/386LrV0
1/2 green bell pepper, diced
1 small onion, diced
1/2 tsp minced garlic https://amzn.to/381ZGKr
1 small can diced green chilies, drained https://amzn.to/2YsbYH3
8 oz cream cheese
4 Tbsp butter
1/2 cup chicken broth https://amzn.to/3y8nMhp
1/2 tsp salt https://amzn.to/34JvSPY
1 tsp black pepper https://amzn.to/30kM9fX
2 to 3 cups shredded Italian cheese

Preparation Steps
1. Preheat oven to 350 degrees.
2. Prepare noodles according to their package.
3. Place the cooked & drained noodles, chicken, pimento, green bell pepper, onion, minced garlic, and green chilies in a large bowl and stir to combine.
4. Melt cream cheese and butter in the microwave, then stir in the chicken broth into the cheese butter mixture.
5. Pour the chicken broth/cheese/butter mixture over the top of the noodle/chicken/veggie mixture.
6. Stir in the salt and pepper.
7. Add HALF of the shredded cheese, and lightly toss everything together.
8. Spray a 1 and ½ quart casserole dish ( https://amzn.to/3mlFdsr )with nonstick cooking spray ( https://amzn.to/3qNbBoe ).
9. Transfer the contents of your mixing bowl to the casserole dish.
10. Sprinkle the remaining shredded cheese on top.
11. Bake at 350 degrees, for 45 minutes or until cheese is bubbly and veggies are cooked.
12. Let cool some before serving so you don't burn your mouth!

We recommend calculating your own macros as they can vary with different brands, as well as amounts if you choose to use more or less than the measurements listed above.
