Recipe:

- 2 ¼ cups heavy cream
- 1 ¾ cups whole milk
- 5 large egg yolks
- 1 cup granulated sugar - divided
- 2 whole vanilla beans (1 tbsp vanilla)
- pinch of salt
- 1/4-1/2 Cup Cocoa Powder
- 1 cup Fresh strawberries

- NOTE: KitchenAid bowl attachment, needs to be in the freezer at least 16 hours) before churning.

1. Pour whole milk into a small sauce saucepan and bring up to 165F Degrees over medium-high heat. DO NOT LET IT BOIL.
2. in a Mixing bowl, add Egg yolks and 1/4 cup of the sugar. whisk well till fully combined. keep an eye on the milk.
3. Once the milk is heated to temp. pour roughly a cup into the egg mixture. Whisk continuously as you pour. once roughly a cup is added and milk well return the mixture to saucepan.
4. Continue whisking and heating until the mixture reaches 165 degrees again.
5. once to temp remove from heat add to container and let cool in the fridge.
6. in a large bowl combine, custard eggs, the Rest of the sugar, Heavy cream, and salt.
7. CHURN!! (follow the manufacturer guide) 20-30 minutes.
8. use a Rubber spatula transfer it to a freezer-safe bowl and store it in the freezer to firm it up.
9. enjoy!
