Soup and chili are some of my favorite healthy meals this time of year. In this video, I’ll show you how to make four of my go-to high protein soup and chili recipes.
You'll find all the ingredients for each chili and soup recipe below, as well as a link to print the recipe and get more info if you're interested.
1. Three Pepper Chili
2 1/2 pounds Extra Lean Ground Beef
2 Tablespoons Olive Oil, divided
2 Sweet Onions, finely diced
2 Poblano Peppers, finely diced
2 small Jalapeño Peppers, seeds removed and finely diced
2 Fresno Chiles, seeds removed and finely diced
1 Carrot (I used 3-4 oz rainbow baby carrots), peeled and finely grated or diced
2 teaspoons Kosher Salt
4 cloves Garlic, crushed or minced
1/4 cup (66g) Tomato Paste
12 oz Non-Alcoholic Beer
1 packet Chili Seasoning
28 oz can Fire Roasted Crushed Tomatoes
4 cups Low Sodium Beef Broth
3 Bay Leaves
For Serving
1-2 Tablespoons Tabasco or Vinegar Forward Hot Sauce, Balsamic Vinegar, or Red Wine Vinegar
1-2 handfuls Fresh Cilantro
Salt and Pepper, to taste

Note: I added a can of beans to half the chili in the video. I also swapped the original ground bison for beef and the peppers for a combo of poblano and mini sweet peppers.
2. Tex-Mex White Bean Soup
8 slices Center Cut Bacon, diced
2 large Onions, diced
1 pound Ground Chicken
3 cans (15 oz each) White Kidney Beans, undrained
16 oz jar Salsa Verde
4 cups Low Sodium Chicken Broth
6-8 cloves Garlic, minced or crushed
1 Tablespoon Ground Cumin, Ground Coriander, and Dried Oregano
4 Extra Thin Corn Tortillas, chopped

3. Spicy Veggie Beef Soup
1 pound Ground Beef (96/4)
1 Tablespoon (16g) Olive Oil, divided
1 medium Onion, diced
4 Celery Stalks, diced
1 pound Russet Potatoes, peeled and medium diced
1 pound Rainbow Carrots, peeled and sliced to match potatoes
3-4 Chipotle Peppers in Adobo, minced and smashed
2 Tablespoons (30g) Tomato Paste
1 teaspoon Garlic Powder
1 teaspoon Kosher Salt
1/2 teaspoon Black Pepper
1 Tablespoon (15g) Soy Sauce
1 Tablespoon (15g) Worcestershire Sauce
2 Tablespoons (30g) Red Wine Vinegar
4 cups Low Sodium Chicken Broth
3-4 sprigs Thyme
2 Bay Leaves
1 cup (135g) Frozen Peas

4. Korean Chicken Dumpling Soup
2 packages (12 dumplings) Frozen Steamed Chicken and Veggie Dumplings
2 teaspoons Toasted Sesame Oil
4-5 Scallions, sliced (separate the whites and greens)
2 cloves Garlic, minced or crushed
1” piece Ginger, minced
2 Tablespoons Gochujang
4 cups Chicken Bone Broth
2-3 Tablespoons Bachan’s Japanese BBQ sauce (or a combo of soy sauce, black vinegar, tamari, fish sauce, etc.)
Kimchi, Gochugaru or Chili Crisp, and other greens (for garnish)
