*Ingredients:*

7. Ground coriander seeds (1 tbsp)
8. Split chickpeas (3 tbsp, soaked)
9. Ghee (clarified butter, 1 tbsp)
10. Cumin seeds (1 tbsp)
11. Carom seeds
12. Warm water
13. Salt
14. Oil (for frying)

*Procedure:*

1. *Prepare the spice paste:*
- In a grinding jar, combine ginger, green chillies, garlic, cumin seeds, and ground coriander seeds.
- Grind into a coarse paste.

2. *Prepare the dough:*
- In a bowl, mix rice flour with the spice paste, cumin seeds, carom seeds, soaked split chickpeas, ghee, and fresh coriander.
- Gradually knead the dough using warm water until soft.
- Cover and let it rest for 15-20 minutes.

3. *Roll and cut Mathri:*
- Roll out thin rounds using a transparent sheet.
- Cut into desired shapes (circles or squares).

4. *Fry Mathri:*
- Heat oil in a pan on medium flame.
- Fry the Mathri until golden brown on both sides.
- Drain excess oil on a paper towel.

5. *Serve:*
- Allow Mathri to cool.
- Store in an airtight container.
