Assalamualikum to all my lovely Viewers,

Lets Make Pineapple Cake

Ingredients:
All Purpose Flour 1 cup.
Fine Sugar 1/4 Cup
Butter Unsalted 75gms
Cream Cheese Cubes – 20 gms
Eggs 2
Pineapple extract 1/2 tsp
Butter Milk 1/2 Cup
Baking Powder and Baking Soda 1 tsp Each

For Icing
Whipping Cream 150 ml
Vanilla extract or pineapple extract 1 tsp

Topping We need
Fresh Pineapple Sliced
Some berries for garnish

Preparation: Time: 4 hours 30 mins
We need.
Take 2 Clean Bowl – Bowl must be Chilled for beating the cream.
Beater to make batter.
Baking mold – crease the mold with butter. I am Using Spring Foam Mold
Icing Knifes for the Cake


COOKING & INSTRUCTIONS
Grease and line a 6" round pan with baking parchment.

In a deep bowl, beat the Cream Cheese and Butter on a high speed for about 6-8 minutes or till they turn light and fluffy.

Add sugar in parts and continue beating. Add one egg at a time and continue beating.

Add the pineapple essence/vanilla extract and beat.
Now add the butter milk and Whisk all the ingredients together.

Now sift together the flour, baking powder and baking soda together on to the dry mixture.

Please note that It is important to sift as we want a light, airy cake. Sifting helps incorporate air into the flour and gives it the desired spongy texture which is very essential for a pastry cake.

Now beat all together in a very low powder to get a smooth batter.

Pour the batter into the prepared pan and tap it on the table a couple of times to get rid of any air bubbles in the batter.

Bake in the pre-heated oven for 30-40 mins or till the skewer inserted comes out clean.

Remove the pan from the oven and place it on a cooling rack for 15-20 minutes. Then slowly un mold it and allow it to cool completely.

Once the cake has cooled down, thinly slice off the cake into 3 equal circles. Slice the cake carefully into 3 layers and keep them covered to prevent drying.

To prepare the icing,
Add place the whipping cream in a bowl and beat it for 3-4 minutes or till the cream forms stiff peaks. Once it reaches soft peaks add the vanilla essence or pineapple essence and beat it well.

To assemble the pineapple cake,

Let’s apply a dab of whipped cream in the Centre of a cake board or serving tray. Carefully place the bottom layer of the cake on it.

Take a brush generously apply 2-3 tablespoons of sugar syrup or pineapple juice all over its surface.

Place one part of the whipped cream and level up the surface.
Add few finely chopped pineapple bits to cover the surface.

Then place the second layer of the cake and brush it with Sugar syrup or the pineapple juice.
Add one more part of the whipped cream, level it up and add the remaining pineapple chunks on it.

Now place the final cake layer on top, brush it with the remaining Syrup.

Add one part of the whipping cream, level it up.
Then use up the remaining whipped cream to cover the sides of the cake and decorate on top as per your choice.

Decorate the top with the pineapple slices or some berries or cherries.

Chill the cake for at least 2 hours before serving.

Cut, serve & enjoy a beautifully delicious pineapple pastry with your family.
