Mouth watering Methi, Aloo Capsicum Vangi Bath
Ingredients - 2 chopped Capsicum/ green bell peppers, 2 chopped Potatoes , & 2 handful of methi (fenugreek) leaves, green peas, tomatoes, 2 green chillies for flavour, 5 byadgi red chillies, curry leaves, cinnamon sticks, 4-5 cloves, coriander leaves, salt, groundnut oil & grated dry coconut 🥥
Vangi bath masala powder ( I have used homemade Vangi bath powder, or you can use MTR Vangi bath powder)
For tempering mustard seeds, Bengal gram, urad dal, asafoetida, tumeric powder, and cashewnuts.
Cook & keep the steamed rice aside
In a hot wok, pour groundnut oil, after the oil heats up a bit, add in mustard seeds, after it crackles, add in chana dal, urad dal & fry well till brown, then add in curry leaves, red chillies, then add in chopped potatoes and fry it for a few minutes, then add in asafoetida, tumeric powder & fry. Add in cloves & fry.
Then add in chopped capsicum/ green pepper and fry well, add in salt as per your taste, add in methi - fenugreek leaves &
saute well for sometime, after that, add in chopped tomatoes 🍅 and let it cook, blend well, and let the tomatoes leave their flavour.
Add in salt as per your taste and mix well.
(Adjust the salt as required)
Then add in 3- 4 spoons of homemade Vangi bath powder or MTR Vangi bath powder as per your taste and spice level. Give it a nice mix. Add in coriander leaves, mix well,
Fry the cashewnuts separately & keep it aside
Fry grated dry coconut separately & add in fried dry coconut into the masala. Then fry fresh green🫛🫛 peas or frozen green peas. After that, add fried green peas 🫛 into the vangi bath masala , slightly mix.
Vangi Bath masala is ready to use.
Finally, add in fried cashewnuts & add in the required Prepared Vangi bath masala into the steamed rice & mix well gently. It is ready.
