SOOOOO... I am REALLY sorry that these uploads stopped abruptly during the Christmas period - work was pretty intense throughout November and December, so I had to make the decision to leave it until Janurary, Because it was just too much to keep up with, and I knew that there was no way I could record, cut, edit and upload videos on a regular basis during that period so I sincerely apologise!
I am also shifting this month, which means I have packing and organising to do so there won't be too, TOO many uploads this month, either. Providing things are all sorted by February, hopefully things will be relatively back to normal! Sorry to the peeps who have been wondering where the videos were...I will hopefully be more diligent with my uploading from now on!

Ingredients:



Cooking spray

2 cans of refried beans (16 ounces) OR check out on my channel for how to make homemade refried beans!

2 cups shredded cheese (Mexican blends are available)

1/2 cup chopped onion

12 corn tortillas

2 cans of red enchilada sauce (10 ounces) OR check out my channel for how to make homemade enchilada sauce!

1) Preheat the oven to 175 degrees Celsius (350 degrees F) and spray an oven tray of reasonable proportions with cooking spray.

2) Mix the refried beans, cheese and onion in a bowl.

3) Pour enough Enchilada Sauce onto a small plate to thinly cover the bottom. Dip both sides of each tortilla into the enchilada sauce, spoon bean filling down the middle of each dipped tortilla and wrap the tortilla around the filling.

4) Arrange all of the filled tortillas in the prepared baking dish. Pour all of the rest of the remaining Enchilada Sauce over the filled tortillas and sprinkle any remaining and/or extra grated cheese over the top.

5) Cover the entire dish with aluminum foil and bake in your preheated oven until the sauce is bubbling and all of the cheese is melted, about 35 to 40 minutes roughly, depending on your particular stove.
