Every street corner had a stall, and every bite felt like comfort bliss. And just when you thought momos couldn’t get any better, in came the Bengali love for Gondharaj lemon. That’s how Gondharaj Chicken Momos were born, a fragrant, tangy twist that’s taken over the streets 😊

This dish combines the classic Darjeeling-style momo with the zest of Gondhoraj lebu resulting in a tangy, flavorful twist that’s become a Kolkata street food sensation.

Recipe for Gondhoraj Chicken Momos

Ingredients

For the dough:
• 1½ cups maida (refined flour)
• A pinch of green food coloring
• 2 tbsp oil
• ⅔ tsp salt
• Water (as needed, to knead)

For the filling:
• 250 g chicken mince (or grated paneer)
• 1 large onion, finely chopped
• 1 tbsp ginger-garlic paste
• 2-3 green chilies, finely chopped
• 1 tbsp Gondaraj lemon zest, finely chopped
• 2 tbsp Gondaraj lemon juice
• ¼ cup spring onion, finely chopped
• 2 tbsp hot oil
• Salt to taste

Method
1. Prepare the dough:
• Mix maida, green food coloring, oil, and salt in a bowl. Gradually add water and knead to form a soft dough. Rest it for 15 minutes.
2. Make the filling:
• Combine chicken mince (or paneer), onion, ginger-garlic paste, green chilies, Gondaraj lemon zest and juice, spring onion, hot oil, and salt in a bowl. Mix well until the filling is well combined.
3. Shape the momos:
• Divide the dough into small portions and roll each into a 3-inch thin circle.
• Place a generous amount of filling in the center of each circle and shape into momos.
4. Steam the momos:
• Preheat a momo steamer. Arrange the momos in the steamer and steam for 7-8 minutes or until cooked through.
5. Serve:
• Serve the momos hot with a spicy chili garlic sauce.
