Chicken Bihari Tikka Boti Karahi

Ingredients For Chicken Marination:
Chicken boti 500 gm
Ginger garlic paste 1 tbsp
Papaya paste 1 ½ tbsp
Yogurt ½ cup
Poppy seeds (grinded) 1 tsp
Split chickpeas (grinded) 1 tsp
Desiccated coconut 1 tsp
All spice powder ¾ tsp
Salt 1 ½ tsp
Red chili powder 1 ½ tsp
Clarified butter 2 tbsp
Wooden skewers as required
Coal for the smoke

For The Karahi:
Tomatoes 5-6
Lemon juice 1 tbsp
Green chilies 10-12
Ginger garlic paste 1 tbsp
Salt to taste
Clarified butter ¾ cup
Julienne ginger 2 tbsp

Method:
Marinate the chicken with all the ingredients for about 2 hours and apply it onto the skewers. Then heat clarified butter and grill the chicken well. Give the coal smoke and set aside.
For the karahi, heat clarified butter add tomatoes and 2-3 green chilies. Fry until the tomatoes are tender. Now add ginger garlic paste and salt, cook well. Then add grilled chicken and cook for a while. Lastly add lemon juice, remaining green chilies and julienne ginger, mix well. Serve hot.

Shinwari Daal Mash Karahi

Ingredients:
Split and skinned black gram (boiled) 2 cups
Onion (chopped) 1 (large)
Ginger (crushed) 1 tbsp
Salt as required
Red chili powder as required
Turmeric powder as required
Tomatoes (boiled, chopped) 1 cup
Yogurt ½ cup
Chicken boti (boiled) 1 ½ cup
Clarified butter ¾ cup
All spice powder ½ tsp
Green chilies (sliced) 6-8
Ginger (sliced) 2 tbsp
Fresh coriander (chopped) 2 tbsp

Method:
Heat clarified butter and fry the onion. Then add boiled chopped tomatoes, chopped ginger, crushed garlic, red chili powder, turmeric powder and salt. Cook well. Now add boiled split and skinned black gram, cook well. Then add chicken boti and yogurt, cook well. Now add ½ cup of water, cover and cook well. Lastly add all spice powder, sliced green chilies, sliced ginger and chopped fresh coriander. Serve hot.

Cucumber and Mint Raita

Ingredients:
Yogurt 250 gm
Cucumber (grated) 1
Garlic (crushed) 1 tbsp
Black pepper (crushed) 1 tsp
Cumin seeds (crushed) 1 tsp
Salt to taste
Mint leaves (chopped) 2 tbsp
Green chilies (chopped) 2

Method:
In the yogurt add salt and beat well. Then add all the ingredients and mix well. Serve.
