Pachadi is an important dish in Kerala sadya, a pure vegetarian feast with many different curries, rice and dessert served on a plantain leaf. Pachadi generally is a mildly spiced coconut and yogurt-based dish made with seasonal vegetables or fruits. Here I am sharing an easy recipe of Pachadi made with ripe Papaya, coconut and other simple ingredients. Ripe papaya which is considered as one of the few diabetic friendly fruit. With a low glucose level these fruit can be a better option for making this deliciously sweet dish. Pachadi is normally made with fruits like pineapple, ripe plantains, raw papaya or even with vegetables like beetroot, cucumber and carrots. Fruits used in the dish, apart from lending their sweetness, release powerful enzymes. Unlike other fruits, the papaya is a rich source of many valuable enzymes. Although mustard seeds are normally used as an ingredient for tempering in most of the South Indian dishes, in Pachadi, the mustard seeds are crushed and mixed with the gravy in addition to using the same for tempering. Why not try out a simple "pacahdi" dish with ripe papaya and enjoy rich and heavy meals.

Recipe notes:-
• Pachadi should be really thick and not runny curry.
• Don't boil the coconut paste for long.
• No need to cook ripe papaya.

• പച്ചടി കുറച്ചു കട്ടിയുള്ള കറി ആണ്, ഒരുപാട് അയവു പാടില്ല.
• തേങ്ങാക്കൂട്ട് കൂടുതൽ നേരം തിളപ്പിക്കരുത്.
• പഴുത്ത പപ്പായ പാകം ചെയ്യേണ്ടതില്ല.
