Ingredients:

4 lbs. of Oxtail
1 tablespoon of all purpose seasoning
1 tablespoon of johnny’s seasoning salt
1 tablespoon of black pepper
1 teaspoon of salt
2 tablespoons of olive oil
3 tablespoons of browning
½ of an onion (chopped)
3 green onions/scallions (chopped)
2 sprigs of fresh thyme
1 teaspoon of pimento berries/allspice
1 bay leaf
1 thumb of fresh ginger
4 cloves of garlic
Water – enough to almost cover the Oxtail in the pressure cooker

Directions:

Wash Oxtail with lime, lemon or 1 tablespoon of vinegar. Then rinse and pat dry.
Season the Oxtail with all purpose seasoning, black pepper, johnny’s seasoning salt, and salt.
Combine well.
On medium/high heat, add olive oil to a large dutch oven or skillet and slightly sear each piece of Oxtail.
Transfer the seared Oxtail to the pressure cooker.
Add onion, green onions, scallion, thyme, allspice, bay leaf, ginger, garlic, browning, water to the pressure cooker.
Once the pressure starts to build/whistle, set your kitchen timer for 35 - 40 minutes.
Taste and adjust salt if necessary.
Add cornstarch to thicken the gravy if necessary.


Serve with your favorite sides and veggies!
