Rava Upma is a popular South Indian breakfast dish made from semolina (also known as rava or sooji). It is quick and easy to prepare and can be customized with a variety of vegetables and spices. Here's a simple recipe for Rava Upma:

Ingredients:

1 cup semolina (rava/sooji)
1 onion, finely chopped
1 green chili, chopped
1/2 inch ginger, grated
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp asafoetida (hing)
10-12 curry leaves
2 tbsp oil
Salt to taste
2 cups water
1 tbsp lemon juice (optional)
1 tbsp chopped coriander leaves (optional)
Instructions:

Heat the oil in a pan over medium heat. Add mustard seeds and let them splutter.
Add cumin seeds, asafoetida, and curry leaves. Stir for a few seconds.
Add chopped onion, green chili, and grated ginger. Saute for 2-3 minutes until the onion turns translucent.
Add semolina to the pan and roast it for 4-5 minutes on low-medium heat. Keep stirring continuously to avoid burning.
Add 2 cups of water and salt to the pan. Mix well and let it cook for 2-3 minutes until the water is absorbed and the upma becomes soft and fluffy. If the upma is too thick, add some more water and mix well.
Add lemon juice and coriander leaves (if using) and mix well.
Serve hot with coconut chutney or tomato chutney.
