Hello Folks!

I hope I find you all well. Today I’ve made a wee batch of these delicious white chocolate and raspberry biscuits (or cookies!) or raspberry ripple biscuits.
I just love the combination of white chocolate and raspberries….strawberry works really well too :)
These are very easy to make…and you’ll get a lot of biscuits from this recipe.

What I used -

270g (9.5 oz) Plain (or all purpose) flour
1 Teaspoon bicarbonate of soda
160g (5.5 oz) Unsalted soft butter
100g (3.5 oz) Light brown soft sugar
100g (3.5 oz) White sugar
1 Medium egg (large in the USA & Canada)
1/2 Teaspoon vanilla
60g (2 oz) White chocolate
60g (2 oz) Raspberries
