Apple kheer is a delicious twist on the traditional Indian dessert, combining the richness of milk with the natural sweetness of apples. This creamy, aromatic pudding is perfect for festive occasions or a comforting treat.
Basic Ingredients for Apple Kheer:
• 3 medium-sized apples (peeled and grated)
• 1 liter full-fat milk
• 1 cup tablespoons sugar (adjust to taste)
• 4–5 cardamom pods (crushed or powdered)
• 7–8 cashews
• 7–8 almonds (optional, sliced)
• 8–10 raisins (optional)
• 7-8 dates (chopped)
• 4 tablespoon ghee (clarified butter)
• Saffron a pinch
• 2 tablespoons of cornflour
Steps to Apple Kheer:
1. Add Dry Fruits:
In a small pan, fry cashews, almonds, and raisins and dates in a little ghee. Keep aside to add them to the kheer for a rich flavor and garnish.
2. Sauté the Apples:
In a pan, heat ghee and add the grated apples. Cook on medium heat for 5–7 minutes, until the raw smell disappears and they become soft. Let them cool.
3. Boil the Milk:
Pour the milk into a heavy-bottomed pan and bring it to a boil. Lower the heat and let it simmer, stirring occasionally, until it reduces slightly and thickens.
4. Add Sugar and Cardamom:
Once the milk is reduced and creamy, add sugar and cardamom powder. Stir until the sugar dissolves completely. Add the dry fruits and cornflour. Stir well so that it doesn’t form lumps.
5. Combine Apples with Milk:
Turn off the heat and let the milk cool slightly before adding the sautéed apples. Mix well. (This prevents the milk from curdling due to the acidity of the apples.) add the saffron milk and give a quick mix
6. Chill or Serve Warm:
You can serve the apple kheer warm or refrigerate it for a few hours and enjoy it chilled.
