Today's Recipe - Chatti Pathiri
Chatti pathiri is a layered pastry made in the Malabar region, of Kerala, India. It is made in both sweet and savoury variations. The dish is similar to the Italian lasagna, but instead of pasta, pastry sheets / pancakes made with flour, egg and water are used. The filling depends on the variation desired.

Ingredients

Cooking Chicken

Chicken -1/2 kg
Turmeric Powder -1/4tsp
Chilli Powder -1/2tsp
Pepper Powder -1/2tsp
Salt -1/2 tsp
Water-

For Masala Filling

Oil - 3tbsp
Garlic -6
Ginger - small piece
Green chilli- 6 plus 2
Curryleaves -
Onion -3big
Salt -1/4tsp
Chilli Powder -1tsp
Coriander Powder -1tsp
Turmeric Powder -1/4tsp
Garam masala -1 1/4 to 1 1/2 tsp
Tomato Ketchup -1tbsp (opt)
Cashewnuts -10
Raisins -10
Ghee - 1tsp

For Dosa Batter

Maida -1 1/2 cup
Water -1 1/2 cup
Salt -1/2 tsp
Sugar -1/4tsp
Pepper Powder -1/2tsp
Egg -1
---------------------------------

For Egg Mix

Egg -3 or 4
Sugar -1/2 tsp
Salt -2 pinch
Milk -1/4 cup

Method

Cook 1/2 kg boneless chicken with chilly,pepper,turmeric powder and salt. Mince it after it cools down. Add oil to a wok. Once it is hot add garlic,ginger and green chillies. Saute. Add salt. Add onion. Saute till golden brown. Add curry leaves. Add turmeric, chilly,coriander powder. Saute on low heat. Add garam masala. Saute. Add tomato sauce( optional). Saute. Add the minced chicken. Mix well.

Adjust the spices according to your preference. The filling should not be very dry. Add coriander leaves. Add some fried cashew and raisins. Add green chillies.

Take a mixie jar Add maida,salt,pepper powder, sugar (pinch) and an egg. Beat it with water. Make dosas/pancake with this batter.

Beat 3 eggs Add milk , salt and sugar. Keep aside.

Take a deep bottomed pan. Grease it with butter/ghee. Place one dosa on the bottom. Before placing it in the pan dip it in the egg mix. Layer the chicken filling on top of the dosa. Keep repeating the layers. The final topping should be the dosa. Spread some ghee on top of the dosa. Poke some holes from the top. Pour the

egg mix . Cook both sides. Cook for 20 mins. Cut it in your desired shapes.
