Steak & Eggs with Orange Curry Sauce Recipe:
Ingredients
1 2" thick ribeye steak, about 13oz.
1 tsp kosher salt, plus more to taste
1tsp freshly ground black pepper
2tbsp + 2 tbsp olive oil, divided
2tbsp butter, more as needed
4 cloves garlic, smashed
2-3 sprigs of thyme
2 large eggs
For Serving
watercress or arugula
sliced avocado
pickled red onion

Sofrito Curry Sauce
½ green bell pepper, cubed
½ red bell pepper, cubed
¼ red onion, cubed
4 cloves garlic
¼ bunch cilantro, leaves and stems
1 tbsp, 2tbsp, olive oil divided
2 tbsp curry powder
1 cup Simply Orange Pulp Free

Instructions
1. In a small food processor add green bell pepper, red bell pepper, red onion, garlic cloves, and cilantro. Pulse ingredients 4-5 times until finely chopped, add 1 tbsp of olive oil to the processor while blending.
2. In a medium sauté pan heat 2 tbsp olive oil on medium high heat. Add curry powder to the pan and whisk to blend. Once warmed through add 1c of sofrito. Sauté on medium heat for 2mins.
3. Add Simply Orange Pulp Free, stir to combine. Reduce heat to low simmer and allow to reduce for 10-12 mins. Salt to taste, remove from heat and set aside.
4. Pat the steak dry and season with salt and pepper on both sides. In a large sauté pan add olive oil and butter to the pan on medium high heat. When butter begins to bubble, add the steak to the pan. Allow it to form a crust, cook for 4-5 mins. Flip the steak, adding smashed garlic cloves and thyme.
5. Carefully tilt the pan down towards you allowing the butter and oil to pool towards you. With a spoon begin to baste the steak continuously with the sauce about 3-4 mins until you have a beautiful crust. Remove from heat and allow to rest on a cutting board for at least 10 mins.
6. Heat remaining olive oil in a nonstick sauté pan over medium heat. Crack eggs into the pan and cook for 3 to 4 minutes, or until white is set and edges are beginning to crisp up. Season with salt and pepper and remove from heat.
7. Slice steak in 1" strips against the grain and plate with the eggs. Drizzle Curry Sofrito Sauce on top of steak.
8. Serve with watercress, avocado slices and pickled red onion.
