🥛 Ingredients (for 1 litre milk)
•Milk – 1 litre (full cream)
•Lemon juice / vinegar – 2 tbsp (mixed •with 2 tbsp water)
•Sugar – 2 cups (about 400 g)
•Water – 4 cups
•Cardamom – 2–3 (optional)
•Rose water – ½ tsp (optional)
👩🍳 Easy Steps
Curdle the milk – Boil the milk, add lemon juice/vinegar → paneer separates.
Strain – Pour into a cloth, wash with cold water, hang for 30 mins.
Knead – Mash paneer until soft dough, roll into small balls.
Sugar syrup – Boil sugar + water + cardamom.
Cook – Drop balls in boiling syrup, cook 12–15 mins on medium flame → they double in size.
Finish – Add rose water, let it cool, serve chilled.
✨ Tip: Paneer should be soft & moist (not too dry) → gives spongy rasagullas.
