Bengali Labra
Labra, a true Bengali gem, is one of the simplest yet tastiest mixed veg dishes you’ll find in Bengali kitchens.
It is made by using whatever seasonal veggies you have on hand, along with Bengali ingredients such as panch phoron (five-spice mix) and ghee for giving it a distinct flavor.
Considered special, it’s an essential part of pujo offerings like Durga Puja, Lakshmi Puja, Ganesh Puja and more.
Super simple to prepare, nutritious, and without the use of garlic and onion (making it perfect for Navaratri)..Labra tastes exceptionally well when paired with Khichudi 🤤
So now that the Durga Puja is here, it’s time to treat yourself to a wholesome plate of khichuri, labra, and all the bhog favorites ❤️

Recipe:
Labra (Bengali Mixed Vegetable) Recipe
Ingredients:
• Vegetables:
• 2 medium potatoes, cubed
• 1 sweet potato, cubed
• 1 small radish, cubed
• 1 small cauliflower, florets
• 1 large eggplant (brinjal), cubed
• 1½ cups pumpkin, cubed
• 250g Pui Shak (Malabar Spinach)
• 3-4 green chilies, slit
• Spices and Others:
• 1 tsp panch phoron (dry-roasted and ground)
• 1 tsp whole panch phoron
• 2 bay leaves
• 2-3 dried red chilies
• 1½ tbsp grated ginger
• 1 tsp turmeric powder
• 2 tsp sugar
• Salt to taste
• ¼ cup mustard oil
• 1 tbsp ghee
Method:
1. Temper spices: Heat ¼ cup mustard oil in a kadhai. Add bay leaves, dried red chilies, and 1 tsp whole panch phoron. Once they crackle, add the grated ginger.
2. Sauté potatoes and veggies: Add the cubed potatoes, sweet potato, radish, pumpkin, cauliflower, eggplant, and Pui Shak. Stir well.
3. Seasoning: Add turmeric, sugar, and salt. Toss to coat the vegetables with the spices.
4. Cook slowly: Cover and cook the vegetables on a low flame until soft, stirring occasionally. No additional water is needed.
5. Finishing: Once the vegetables are cooked through, add 1 tbsp ghee and sprinkle with the roasted panch phoron powder. Mix gently.
6. Serve: Cook for another 2 minutes and serve hot with khichdi.
