As much as I've wanted to visit Colombia before, I've never wanted to go as badly as I do after making this awesome Colombian dish.

Camila lives in Medellin, Colombia and we've frequently been in touch via the wonders of YouTube. She sent me this video, challenging me to make a very popular Colombian dish: patacones con hogao!

Here's how you make patacones con hogao:

First, the hogao:

4 large tomatoes, cut in chunks (with their juices)
1/2 white onion, sliced
1/2 red onion, sliced
1/2 tablespoon butter
1/3 cup chicken stalk
1 scallion, for garnish
1 tablespoon ketchup
a pinch of cumin
salt and pepper, to taste

Cook the onions in butter (or olive oil) for 2-3 minutes, then add the tomatoes, spices and ketchup. Cook it for a minute, then add the chicken stock. Let it simmer for about 10 minutes to let it thicken.

The patacones:

-you'll need green plantains. Two plantains for each person you'll want to serve should be sufficient.
-whichever oil you prefer to fry with; I used canola oil because I had some laying around that it's certainly not the healthiest option

Peel the plantains and cut them into approximately one-inch chunks. Fry them until they begin to turn yellow. Place them on a paper towl to catch the oil, then individually smash each of them to flatten. I used my cast-iron skillet to do this. Then fry them a bit longer, until they begin to turn golden. Lay them to dry a bit on a paper towel again.

Then put your patacones on a plate, sprinkle them with salt, and top it with spoonfuls of the hogao.

There you go! Patacones con hogao!! :)
