Creamy Sundried Tomato and Spinach Pasta

Ingredients:

150g pasta (any type you prefer)

2 tbsp butter

2 tbsp olive oil

1 onion, chopped

3 garlic cloves, minced

1 tsp tomato puree

1 tsp mixed herbs

1/2 tsp salt

1/2 tsp chili flakes

270ml cream

1/2 cup pasta water

4 sundried tomatoes, chopped

A handful of fresh spinach

4 tbsp grated Parmesan cheese

Instructions:

Cook the Pasta:

Cook the pasta according to the package instructions until al dente.

Reserve 1/2 cup of pasta water before draining.

Prepare the Sauce:

In a large pan, heat 2 tbsp of butter and 2 tbsp of olive oil over medium heat.

Add the chopped onion and minced garlic. Sauté for around 2 minutes until fragrant and the onions are translucent.

Add Flavor:

Stir in 1 tsp of tomato puree, 1 tsp of mixed herbs, 1/2 tsp of salt, and 1/2 tsp of chili flakes.

Cook for 1-2 minutes, allowing the flavors to meld together.

Create the Creamy Base:

Pour in 270ml of cream and add the reserved 1/2 cup of pasta water.

Cook the mixture for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.

Incorporate Vegetables:

Add the chopped sundried tomatoes and a handful of fresh spinach to the pan.

Mix well until the spinach wilts.

Combine Pasta and Sauce:

Add the cooked pasta to the pan.

Sprinkle 4 tbsp of grated Parmesan cheese over the top and mix everything together until the pasta is well coated with the creamy sauce.

Serve:

Serve immediately, garnished with extra Parmesan cheese and fresh herbs if desired.

Tips and Tricks:

Pasta Water: Always reserve some pasta water before draining. It contains starch that helps thicken the sauce and makes it cling to the pasta better.

Cream: For a lighter version, you can use half-and-half or a mixture of cream and milk.

Sundried Tomatoes: If you prefer a stronger tomato flavor, you can use more sundried tomatoes or add a bit of sun-dried tomato paste.

Spinach: Baby spinach works best as it wilts quickly and blends well with the sauce.
