Here’s a really easy and fun recipe to make white chocolate and raspberry fudge at home. Hope you have as much fun making these as I did. Recipe and helpful tips below

White Chocolate 350g (2 cups)
Condensed milk 250g (3/4 cup plus 1tsp)
Fresh or frozen Raspberries 100g ( 3/4 cup
Water 50ml ( 1/4 cup)
Granulated sugar 1tsp
Lemon juice 1 TBSP
Corn flour or cornstarch 1 tsp
Toasted and chopped Pistachio 80g ( 3/4 cup)
Unsalted butter 60g (1/4 cup)
Pinch of salt
1/2 tsp vanilla extract ( optional)

Helpful tips
1.Make sure raspberries are on a low or medium heat when simmering
2.When making the fudge, make sure the bowl doesn’t touch the simmering water
3.Be patient in waiting for the fudge to set
