A quick and easy vegetarian recipe. This eggplant recipe makes a great side salad recipe at a BBQ.

Bake eggplant slices in hot oven for 15 minutes. Sauté onion and garlic, add vinegar to reduce. Remove from heat then add rinsed and drained canned chickpeas, tomatoes and fresh herbs. Arrange eggplant on a platter, spoon over dressing, fetta, pine nuts and serve with rocket leaves.

Ingredients:
3 firm medium eggplants, cut into 2cm-thick rounds
½ cup Woolworths Select Spanish classic olive oil
¼ cup Woolworths Select pine nuts, toasted
100g soft Greek fetta, crumbled
120g bag Woolworths Select rocket
Sweet and sour dressing
1 onion, finely chopped
2 garlic cloves, thinly sliced
1/3 cup Woolworths Select red wine vinegar
2 tablespoons Homebrand caster sugar
425g can Woolworths Select chickpeas, rinsed and drained
2 large roma tomatoes, deseeded and chopped
¼ cup each, coarsely chopped fresh mint and fresh continental parsley leaves

Method:
1. Preheat oven to 240C fan-forced. Brush eggplant slices liberally on both sides with 3 tablespoons of the olive oil. Place among two baking-paper lined oven trays. Bake for 15 minutes or until golden and just cooked through. Season.
2. For dressing, add remaining olive oil to a large frying pan. Add onions and garlic, cook, stirring until soft. Stir in the vinegar and sugar. Simmer for 5 minutes until reduced by half. Remove from heat. Stir in 2 tablespoons of oil, chickpeas, tomatoes, mint and parsley. Season. Cool.
3. Combine rocket and a drizzle of olive oil in a serving bowl. Toss to coat. Arrange eggplant on a platter in a round (circle?), slightly overlapping. Spoon over dressing. Scatter with pine nuts and pieces of fetta. Serve with rocket to the side.

Tip1: The sweet and sour dressing is a lovely cold accompaniment to lamb and will last for 2 days in the refrigerator.
Tip2: This recipe can be doubled for a sharing platter at barbecues and picnics.
Tip3: Use firm eggplants for this dish to avoid bitterness.
