Recipe:

Ingredients:
1 whole chicken, broken down
2 tsp baking powder
1 cup cornstarch
Cooking spray of choice (I use avocado oil spray)
1 5oz container Litehouse Simply Artisan Gorgonzola Center Cut Cheese
1/2 cup Greek yogurt
5 tbsp buttermilk
1 tsp honey
1 tbsp butter
1 tbsp EVOO
1 shallot, diced
3 cloves garlic, minced
2 cups fig spread or fig preserves
1 tbsp Korean chili pepper paste/gochujang (or to taste)
1 tbsp soy sauce, I used whiskey barrel aged
Zest of 1 lemon
Juice of ½ lemon
Salt and peppa
Whole fresh figs for serving/decoration (optional)

Directions:
Prepare chicken by patting dry and seasoning liberally with salt and pepper. Sprinkle baking powder over chicken and massage in.
Dredge chicken in cornstarch, shaking off excess and press into the chicken with your hands.
Spray liberally with cooking spray and air fry at 400 F until internal temp reaches 165 F – smaller pieces will take around 15-20 minutes, breasts a little longer. Chicken size varies so using a meat thermometer will be most accurate. If you have to fry in batches, you can keep in a 225-250 F oven to keep warm for a bit. You can also use a standard deep fryer if you’re feelin’ like really goin’ for it.
Prepare your gorgonzola sauce. Mash one container of Litehouse Simply Artisan Gorgonzola Center Cut Cheese with a fork until crumbly, then add the buttermilk, Greek yogurt and honey and mix until creamy. Season with salt (to taste) and refrigerate till ready to use.
Prepare your fig glaze. Saute shallots and garlic in your butter and EVOO at medium/medium low heat until shallot is translucent and garlic is fragrant, about 2 minutes. Then add your fig spread, chili paste, soy sauce, lemon zest and juice and mix to combine. Let that bubble for a couple minutes to let the flavors get all cozy with one another, then taste to see if you need to adjust seasoning.
