HUNGARIAN-Inspired SAUSAGE, ONIONS & PEPPERS — made in slow cooker

*1 packet good quality sausages (I used Bratwurst-style sausages, 240 g (1/2 lb), cut in bite-size pieces (vegan sausages also work well with this recipe!)

*3 bell peppers, deseeded & chopped (I used three different colors)

*1 onion, peeled & chopped

*2 cloves garlic, peeled & grated

*2 tins chopped tomatoes

*fill an empty tomato tin half full of water

*1 tablespoon Hungarian sweet paprika

*1/2 teaspoon ground black pepper (salt, if desired… I cook with little salt)

*1 beef or vegetable stock or cube, crumbled (optional, but gives a little flavor-boost)

Prepare the veg and all ingredients and add to the slow cooker, giving it all a good stir. Place lid on the slow cooker, and cook on HIGH for 3-4 hours, or LOW setting for 7-8 hours. (Times can vary a little from one slow cooker type/brand to another, so adjust according to yours. My meal was ready at 3 hours cooked on high.) Check at 3 hours HIGH/7 hours LOW, if desired, to adjust seasoning to preference, and complete cooking. I served this over hot, cooked rice, but noodles or pasta of any kind would also be a good choice. Freezes very well.
