大家好 这一期和大家分享一道马来西亚美食 干辣椒鸡 不管大马天气多热 我们就是爱吃辣 吃到飙汗

材料 :
鸡排肉 2 片 / 带骨鸡肉
腌料 : 盐 胡椒 黄姜粉 油
上粉:面粉 木薯粉

其他材料 :红葱 蒜头 姜 灯笼椒 干辣椒
调味料 :甜酱油 辣椒酱 蚝油 白糖 清水 李派林
摆盘 :香蕉也 白饭 荷包蛋 冷拌菜/炒菜

Ingredients (Diana Aw)
1. Chicken drumstick 2pcs, cut bigger pieces. Lightly pound the chicken using back of knife. Mix with little salt and pepper and 1/2tsp tumeric powder, then add little oil and mix again. Set aside
2. Red onion 1pc, diced
3. Ginger small piece, smashed and sliced
4. Garlic 3 cloves, slices
5. Green capsicum half piece, diced
6. Green spring onion, 2cm long
7. Dried chilli ~6pcs, wash, dry and cut smaller
8. Plain flour 2tbsp
9. Tapioca flour 1tbsp
10. White rice
11. Banana leaf

Sauce (mix 1-5 in a bowl)
1. Sweet soya sauce 3tsp
2. Chilli sauce 1.5tbsp
3. Oyster sauce 0.5tbsp
4. Sugar 1tsp
5. Water little
6. LP sauce (add later)

Method
1. Heat wok with more oil. Add plain flour and tapioca flour in the chicken and mix well. Deep fry the chicken for 3min. Drain and rise the oil temp. Re-fry the chicken again till golden brown . Set aside
2. Stir fry the ginger, red onion and garlic till fragrant. Then add dried chilli and stir till fragrant. Add the sauce and mix well. May add more water if too dry. Add LP sauce and mix well
3. Add chicken and green capsicum and stir fry under medium low heat till the chicken is covered with sauce. Add spring onion
4. Arrange the rice on the banana leaf and add chicken
5. Serve and enjoy! 💕
