Ingredients
While the core ingredients are maize and beans, there are many variations of Githeri. A modern recipe can include:
Boiled maize and beans (fresh or dried, with dried beans typically soaked overnight)
Onions, garlic, ginger, and tomatoes
Carrots, bell peppers, or potatoes
Spices like curry powder, cumin, and paprika
A stock cube for added flavor
Cooking oil and salt
Cilantro (dhania) for garnish
Preparation and cooking
The basic preparation involves boiling the maize and beans together until they are tender. A more elaborate method includes sautéing other ingredients for a rich sauce.
Traditional method (simple boiled version)
Soak dried beans overnight, if using, to reduce cooking time. If using fresh maize and beans, this step is not necessary.
In a pot (sufuria), boil the maize and beans together with water until they are fully cooked and soft.
Add salt and oil or fat just before serving.
Modern method (stewed version)
Boil or pressure cook the maize and beans until they are tender. Drain and set aside, reserving some of the cooking water.
In a separate pot, heat oil and sauté chopped onions until translucent.
Add garlic and ginger and cook for another minute until fragrant.
Stir in spices like curry powder, paprika, and cumin, and cook briefly to toast them.
Add chopped tomatoes and a stock cube, letting the mixture simmer until it forms a thick sauce.
Add the cooked maize and beans, along with any other vegetables like carrots or potatoes.
Pour in some of the reserved cooking water or broth, and simmer for 10–15 minutes to allow the flavors to meld.
Add cilantro just before serving.
How to serve
Githeri can be served hot on its own as a hearty and nutritious main course. It is also commonly accompanied by other dishes or ingredients:
With a side of avocado
Paired with Kenyan chapati or ugali
With a side of a green vegetable like cabbage
Enjoyed with a cup of tea, especially for breakfast
