Dates Almond Chocolate Energy Balls

These dates, almonds and chocolate energy balls are a great no bake healthy dessert recipe idea. Popular with both kids and adults, these chocolate energy bites are full of nutrients present in dates, almonds and flaxseed powder.

You can skip chocolate chips for a healthier version. I have added few here since this version is more popular with kids! Enjoy this no cook no bake dessert recipe. Perfect for a quick breakfast, snack or lunchbox!

DATES ALMONDS CHOCOLATE ENERGY BITES

Makes 17-18 energy balls (with 1 tablespoon of energy ball dough, used for each).

Ingredients
-------------------
Almonds - 1 cup
Pitted Dates - 1 cup
Unsweetened cocoa powder - 2 tbsp
Ground Flaxseed (Alsi powder) - 1 tbsp
Mini Semi-sweet Chocolate Chips - 2 tbsp (optional)
Water - 2 tbsp (or as needed)

Directions
-----------------
In a food processor, add almonds.
Pulse a few times till you see crumbly powder.
Add pitted dates, unsweetened cocoa powder and ground flaxseed.
Pulse a few times again until all the ingredients are mixed (you will still see a crumbly texture).
Add 2 tablespoon of water (or as needed, start with 2 tablespoon).
Pulse 1 or 2 times.
Add semi-sweet mini chocolate chips.
Pulse again until the mixture starts coming together and feels sticky.
(Optional) If the mixture still feels crumbly, add more water, 1 tablespoon at a time, and pulse again.
Transfer the mixture to a bowl.
Take one tablespoon of mixture and prepare a ball.
Repeat the above step to make energy balls of the remaining mixture.
Store the energy balls in an airtight container for a week or two.
