To Make Plantain Coconut Stir Fry

Plantain - 2 Nos
Oil - 1 Tbsp
Chana Dal - 1 Tsp
Urad Dal - 1 Tsp
Cumin Seeds - 1 Tsp
Mustard Seeds - 1 Tsp
Red Chilli - 2 Nos
Hing / Asafoetida - 1/2 Tsp
Onion -1 No.
Garlic - 8 Cloves
Salt - 1 Tsp
Turmeric Powder - 1/2 Tsp
Kashmiri Chilli Powder - 2 Tsp
Coriander Powder - 2 Tsp
Grated Coconut - 1/2 Cup
Curry Leaves
Oil

Method

Start by cooking 2 plantains. Remove the ends, place them in a pressure cooker, add enough water, and cook for 2 whistles. Once done, let the steam release naturally. Peel the skin, chop the plantains into medium pieces, and set aside.

Heat 1 tbsp of oil in a wide kadai. Add 1 tsp each of chana dal, urad dal, cumin seeds, and mustard seeds. Once the mustard seeds splutter, add 2 dried red chilies (halved) and ½ tsp asafoetida powder. Then, add 1 finely chopped onion and sauté until translucent.

Add 7–8 cloves of pounded garlic for enhanced flavor. Stir in 1 tsp salt, ½ tsp turmeric powder, 2 tsp Kashmiri red chili powder, and 2 tsp coriander powder. Mix well.

Add the cooked plantain pieces and mix on low flame. Drizzle 2 tsp oil to coat the masala evenly. Toss in fresh curry leaves for aroma and flavor.

Add ½ cup freshly grated coconut and mix thoroughly. Roast the fry on low flame for 10 minutes until flavors meld.
