What is Oxalate Overload? -
Oxalate overload occurs when toxic compounds from 'healthy' plant foods build up in your body over time. Almost everybody in the modern world, especially those following plant-based diets, vegan diets or even the standard American diet, are eating dangerously high levels of oxalates without knowing it.
Dr. Bill Schindler is the director at the Eastern Shore Food Lab, co-owner and head chef at the Modern Stone Age Kitchen, with a background in archaeology and anthropology. His focus is on ancestral diets and implementing lessons from our dietary past into modern culinary practices for optimal health.

Even professionals and experts can get sick from oxalates - this crucial knowledge has been left out of professional training. Our doctors don't know enough about the toxic potential of oxalate, which is why you can't turn to the usual experts for help. When any of us gets sick from oxalates, it's not our fault - we need better information.

⚠️Disclaimer:
Clearing illness or "dumping" episodes may be more likely for persons who, like Dave, abruptly switch to a very low oxalate diet, such as a carnivore diet. If you choose to eat fewer foods with oxalates, please learn to do so gradually—as I recommend in Toxic Superfoods.
❓What are #oxalates? Why are they bad for you?
➡️Oxalic acid or #Oxalate is a toxin that causes oxidative stress and cell damage. It binds to minerals such as calcium and magnesium and forms crystals. Crystals lodged in cells, glands, eyes, bones and other tissues can cause tissue damage, chronic-recurring inflammation, pain, and other health problems.
❓So where do they come from?
➡️Plants make oxalic acid and oxalate crystals. High-oxalate foods include many popular foods that are widely recommended. Because of the general confusion about which foods are high in oxalate, please consult my website for valid information on the oxalate content of foods. Foods to watch out for include: Spinach, Chard, Tea, Chocolate (dark chocolate in particular), Nuts (especially almonds, cashews and peanuts), Chia seeds, Bran, Quinoa, Sweet Potatoes, and White Potatoes.
❓How do we get rid of them?
➡️By avoiding or minimizing your intake of high-oxalate foods, your body can begin to clear them out. Make sure you slowly reduce your oxalate intake to avoid dramatic symptoms as your body clears oxalate deposits. Symptoms of rapid clearing include rashes, itching, diarrhea, joint pain, gout, interstitial cystitis, cardiac arrhythmia, blood sugar swings, cloudy urine, gritty eyes, and kidney stones.
⚠️Many plant foods are low in oxalate and can still be eaten on a low-oxalate diet if you wish to do so.
