Ingredients:

For the cake:

6 egg whites (room temperature)
2 cups caster sugar
6 egg yolks
2 cups all-purpose flour
1 tablespoon baking powder
1 cup warm coconut milk
1/2 cup coconut powder

For the tres leches mixture:

1 can condensed milk
3/4 cup coconut milk
1 cup whole milk

Instructions:

1. Preheat the pot on medium flame for 15 minutes.
2. Grease the mold and set it aside.
3. In a mixing bowl, beat the egg whites on medium-high speed until stiff peaks form.
4. Gradually add the caster sugar and continue beating until stiff and glossy.
5. Add the egg yolks one at a time, beating well after each addition.
6. In a separate bowl, whisk together the flour and baking powder.
7. Strain the dry ingredients into the egg mixture and whisk until smooth.
8. Add the warm coconut milk and whisk until well combined.
9. Add the coconut powder and mix well.
10. Pour the batter into the prepared mold and bake on medium-slow flame for 40-45 minutes or until a toothpick comes out clean.
11. Remove from heat and let cool completely.
12. Once the cake is cool, cut it into small square pieces.
13. In a jug, mix together the condensed milk, coconut milk, and whole milk.
14. Pour the tres leches mixture over the cake pieces and let it absorb.
15. Sprinkle a layer of coconut powder on top.
16. Refrigerate overnight or for at least 6 hours to chill.
