Ingredients
For the Chicken Marinade:
• 1 whole chicken (3-4 lbs), spatchcocked
• 3 tablespoons olive oil
• 2 tablespoons white vinegar
• 2 tablespoon fresh lime juice
• 2 tablespoon ginger garlic past
• 2 tablespoon aji panca (Kashmiri red chilli /  paprika )
• 1 teaspoon light soy sauce
• 1 teaspoon ground cumin
• 1 teaspoon ground corridor
• 1 teaspoon dried oregano
• 1 teaspoon ground black pepper
•  teaspoon salt according your test


For the Green Sauce (Ají Verde):
• 1/2 cup mayonnaise
• 1/4 cup fresh cilantro, chopped
• 1-2 jalapeños or serrano peppers (seeded for less heat)
• 3 garlic cloves
• 1 tablespoon lime juice
• 1 tablespoon olive oil
• Salt and pepper to taste

Instructions
1. Marinate the Chicken:
• Mix all marinade ingredients in a bowl.
• Rub the marinade thoroughly over the chicken, making sure to get it under the skin for maximum flavor.
• Place the chicken in a resealable bag or covered bowl or plastic bag and refrigerate for at least 4 hours, preferably overnight.
2. Prepare the Grill:
• Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
• If using charcoal, arrange coals for indirect cooking by banking them to one side.
3. Grill the Chicken:
• Place the chicken skin-side down over indirect heat.
• Cover the grill and cook for 30-40 minutes, turning occasionally.
• Move the chicken to direct heat to crisp the skin, cooking for an additional 5-10 minutes until the internal temperature reaches 165°F (74°C).
4. Make the Green Sauce:
• Blend all sauce ingredients in a food processor or blender until smooth.
• Adjust salt, pepper, or lime juice to taste.
5. Serve:
• Let the chicken rest for 5-10 minutes before cutting.
• Serve with green sauce, crispy fries, and a simple salad for an authentic Peruvian experience.
