Fourteen years after the restaurant burst onto the capital's food scene, it has now spread across much of the nation, each venue bringing a unique spin on the food and culture of Bombay.

Co-founder Kavi Thakrar knows a thing or two about where to get a decent meal. He shows the Evening Standard around Shoreditch, site of his second restaurant, to show us his favourite places to go.

In a wide ranging conversation, the restaurateur gives us an insight into the ethos behind Dishoom, the world famous bacon naan, and how British attitudes to Indian food have changed in recent years.
