Pho is the national soup of Vietnam.

2 beef short ribs
1kg beef shank
4L water
1/3 cup fish sauce
1 tbsp salt
1 onion
25g ginger
1 cinnamon stick
5 star anise
5 green cardamom
1 brown cardamom
1 slice liquorice
6 cloves
1 tsp coriander seeds
1 tsp fennel seeds

2 x 400g fresh rice noodles
500g beef tenderloin
24 beef balls
200g bean sprouts
2 spring onions
15g cilantro
1 onion

Vegetable side dish
Herbs :
20g mint
2 sprigs of Thai basil
20g Vietnamese cilantro rau-ram
1 sprig of ngo gai

1 lemon
Hot chili (optional)
Shrimp paste (optional)
Hoisin sauce
Sriracha Chili Sauce
