Welsh Metheglin Mead - Iechyd Da Med

We came up with a recipe for a Welsh Style Methegllin Mead. The Welsh are known for their meads and metheglins in particular. Metheglin is simply a mead made with herbs and spices. They've been made for thousands of years and were originally used for medicinal purposes. Ours is inspired by Welsh traditions and ingredients and as such, carries a Welsh name. We thought it was appropriate. (apologies for mispronunciation of Iechyd Da as neither of us are fluent in Welsh)

Ingredients:
3 lbs Dandelion Honey (thanks to VIP member Joseph Woodall! If you don't have access to this type of honey then either clover or wildflower should work equally as well)
1 ounce Ginger (chopped)
1/10 ounce dried Thyme

Warm Water to fill to 1 US gallon
