BUTTER COOKIES with CARAMEL FILLING

Ingredients:
125 g unsalted butter
1 egg yolk
170 ml condensed milk
170 g plain flour
150 g cornstarch
1/2 cup caramel (I used Nestle caramel)

Method:
1. In a bowl, beat butter.
2. Add egg yolk. Mix.
3. Add condensed milk. Mix.
4. Add plain flour and cornstarch. Mix with spatula until dough is formed.
5. Transfer dough into a clean bowl, cover with cling wrap and refrigerate for 30 minutes.
6. Pre-heat oven to 130 degrees Celsius convection or 150 degrees Celsius conventional.
7. Take out dough from the fridge, roll with a pin until approximately 3mm thick.
8. Use a flower cookie cutter to cut dough.
9. Place cookie dough on a lined tray.
10. Bake for 20 minutes at 130 degrees Celsius convection or 150 degrees Celsius conventional oven.
11. Let cookies cool down completely on a rack.
12. Take one cookie, put half a tsp of caramel on top, then cover it with another cookie.
13. Do it with the rest.
14. Serve and enjoy!
