Mushroom and Vegetable Fried Rice Recipe

Ingredients:

6 tablespoons vegetable oil, divided

400g sliced mushrooms

½ teaspoon salt

½ teaspoon black pepper

1 sliced onion

1 cup frozen mixed vegetables

4-5 eggs

2 cups cooked rice

4 tablespoons soy sauce

4 tablespoons sesame oil

Additional salt and pepper to taste

Instructions:

Cook the Mushrooms:

Heat 4 tablespoons of vegetable oil in a large pan or wok over medium-high heat.

Add the sliced mushrooms, ½ teaspoon salt, and ½ teaspoon black pepper.

Fry the mushrooms for about 5 minutes, stirring occasionally, until they are golden brown and tender.

Remove the mushrooms from the pan and set aside.

Cook the Onions and Vegetables:

In the same pan, add 2 tablespoons of vegetable oil.

Add the sliced onion and cook for 2-3 minutes until they start to soften.

Add the cup of frozen mixed vegetables and cook for an additional 3-5 minutes until the vegetables are heated through and tender.

Scramble the Eggs:

Push the vegetables to one side of the pan.

Crack the eggs into the empty side of the pan and scramble them until fully cooked.

Combine Ingredients:

Mix the scrambled eggs with the vegetables in the pan.

Add the cooked rice, soy sauce, and sesame oil to the pan.

Return the cooked mushrooms to the pan.

Stir everything together until well combined and heated through.

Taste and adjust seasoning with additional salt and pepper if needed.

Serve:

Serve hot and enjoy your delicious mushroom and vegetable fried rice!
