There's HUGE range of food crops you can be planting right now, including beets, cabbage, lettuces, arugula, spinach, carrots, and if you have a small greenhouse, you can plant potatoes for a Christmas harvest! In this video you'll see we planted beans as well, not so much in the hopes of having beans before winter, but to pull Nitrogen into the soil through their leaves and replenish what two seasons of corn growth have depleted.
