Kuzhalappam is a crunchy and tasty fried snack. It is a traditional Indian snack item especially in Kerala.
INGREDIENTS
For coconut mix
Grated coconut 3/4 cup
Shallots 10-12
Cumin seed 1 tsp
Water 1 tbsp
For the dough
Roasted rice powder 2 1/4 cups
Butter or coconut oil 1 tbsp
Water 2 cups
Black sesame seeds 1 tbsp
Salt to taste
Directions to make Kuzhalappam
Grind the onion, cumin seeds, and coconut with little water till to smooth paste.
Boil 2 cups water with salt. Add the ground coconut mix and sesame seeds.
Gradually add the roasted rice flour.
Mix well. Cover and keep aside for 5 min.
Transfer the dough on a flat surface; wet your hand in water and knead to make a smooth dough
Grease your fingers in oil and pinch a small lemon sized ball and spread the ball using a puri press or rolling pin into a small circle. Make sure to grease the work surface.
Cut into round shape using cookie cutter or mouth of a steel glass. Wrap the cut round disc on index finger / or a wooden rolling pin / a greased rod and close the both edges . Place this on tray or plate.
Heat the oil in wok on medium flame. Deep fry all this kuzhalappams on medium flame till to little brown and crisp.
Remove the kuzhalappams on kitchen towel. Cool and store the kuzhalappams in airtight jar serve with tea or coffee.
