Potlakaya Perugu Pachadi is a traditional South Indian dish made with snake gourd (potlakaya) and yogurt (perugu). It's a delicious and refreshing side dish that goes well with rice. Here's a simple recipe for making Potlakaya Perugu Pachadi:


Ingredients:

• 1 snake gourd (potlakaya), peeled and finely chopped
• 300ml yogurt (curd or perugu)
• 1 tablespoon oil
• 10-15 green chilies
• 1 teaspoon jeera
• 10 Garlic pods
• Salt to taste

For the seasoning (optional):

• 1 tablespoon oil
• 1/2 teaspoon mustard seeds
• 1/2 teaspoon cumin seeds
• 6 Dry Chilies
• Few curry leaves
• 1/2 teaspoon urad dal

Instructions:

1. Prepare Snake Gourd: Wash the snake gourd thoroughly, peel it, and finely chop it into small pieces.
2. Cook Snake Gourd: In a pan, heat 1 tablespoon of oil. Add green chilies Sauté for a min, Add the chopped snake gourd to the pan and sauté for a few minutes until it becomes soft. Cover the pan and cook on low heat until the snake gourd is completely cooked. Stir occasionally.
3. Cool the Mixture: Allow the cooked snake gourd mixture to cool down to room temperature.
4. Mix Yogurt: In a mixing bowl, whisk the yogurt until smooth. Add salt to taste.
5. Making of paste in stone pestle: in a pestle add jeera and garlic pods make a rough crush and then add fried green chilies make a rough paste and then add fried snake gourd and make rough paste, Use a circular motion, applying pressure to break down the ingredients.
6. Continue Grinding: Grind until you achieve a smooth paste. The stone pestle and mortar help release the flavors and aromas of the ingredients
7. Combine Yogurt and Snake Gourd Mixture: Add the snake gourd mixture to the yogurt and mix well. Adjust salt according to your taste.
8. Prepare Seasoning (Optional): In a small pan, heat 1 tablespoon of oil. Add mustard seeds, jeera, urad dal, Once the mustard seeds splutter and urad dal turns golden brown, add curry leaves and dry chilies sauté for a while once they are fried switch off the flame and add ¼ tsp of turmeric and mix will, pour this seasoning over the yogurt and snake gourd mixture.
9. Serve: Mix well and serve the Potlakaya Perugu Pachadi with steamed rice.
