HARE MATAR KI TIKKI KI CHAAT

Preparation time 5-10 minutes
Cooking time 25-30 minutes
Serving 2

Ingredients
3-4 tbsp Ghee, घी
1 inch Ginger, chopped, अदरक
3 fresh Green chilli, chopped, हरी मिर्च
2½ cups fresh Green peas, हरे मटर
½ tsp Asafoetida, हींग
½ tsp chaat masala, चाट मसाला
½ tsp dried Mango powder, आमचूर पाउडर
2 tbsp Coriander & Mint leaves, धनिया और पुदीना पत्ती
Ghee for frying, घी

For Chaat Masala
2 tbsp Coriander seeds, धनिया के बीज
2 tbsp Cumin seeds, जीरा
1 tbsp Fennel seeds, सौंफ
2 tbsp Black pepper cons, काली मिर्च
2 Dry red chillies, सूखी लाल मिर्च
1 tsp Salt, नमक

Other Ingredients
Curd, beaten, दही
Tamarind chutney, इमली की चटनी
Green chutney, हरी चटनी
Red Chilli, sliced, लाल मिर्च
Sev, सेव

Process
In a kadai or handi, add ghee once it's hot, add ginger, green chilli, green peas, asafoetida and saute on medium flame.
Cover it with the lid and cook for 10 minutes.
Onces the green peas are cooked with the help of a back of a spoon, mash it properly.
Transfer it into a bowl, let it cool down.
Add prepared chaat masala, dry mango powder, coriander mint leaves and mix everything well.
Take some portion from the mixture and shape it like a tikki, repeat this process for all others.
In a pan, Heat ghee and fry the tikki's in hot ghee on medium heat until golden brown and crispy for both sides.
Remove it in absorbent paper.
Garnish it with curd, tamarind chutney, green chutney, red chilli, sev, coriander sprig.
Serve hot.

For Chaat Masala
In a pan, add coriander seeds, cumin seeds, fennel seeds, black peppercorns, dry red chillies and salt to taste.
Dry roast the spices on medium flame. Onces it cools down, transfer it into a grinder and grind it coarsely . keep it aside for future use.
