Ingredients:

Kaddu (bottle gourd): 1 medium sized
Tuvar/Toor dal (pigeon pea lentils): 1 cup
Pyaz (onion): 2 whole
Gosht (mutton): 100 grams (according to individual preference)
Tamatar/Tomatoes (medium sized): 3 whole
Tel (cooking oil): 2 tablespoons
Adrak lehsan ka paste (ginger garlic paste): 1 tablespoon
Bareek namak (salt): 1 teaspoon + 1 1/2 teaspoon
Haldi powder (turmeric powder): 1/2 teaspoon
Lal mirch powder (red chilli powder): 2 teaspoons
Pakki imli ka khatta (tamarind water): 1 cup
Garam masala powder (spices): 1 teaspoon
Kari patta (curry leaves): a handful
Kata hua hara dhaniya (chopped coriander): a handful
Sabith hari mirchein (whole green chillies): 5

Procedure:

1. Kaddu ko chheelkar, lambai se iske chaar pieces kaat lijiye. Har ek piece se beej wala soft hissa nikal dijiye aur diamond shape ke medium size ke pieces kaat lijiye.

2. Pressure cooker mein kati hui pyaaz daliye. Gosht ke medium size ke pieces daliye (agar aap chehen toh gosht ki meqdaar badha sakte hain).

3. Kate hue tamatar daliye, tel (oil), adrak lehsan ka paste, 1 teaspoon bareek namak, haldi powder, lal mirch powder aur 1cup paani dalkar achhi tarah se mila lijiye.

4. Dhakkan dhaanp dijiye aur do se teen seeti (2 -3 whistles) aane tak pakaiyye.

5. Doosre cooker mein dhuli hui tuvar dal daliye. 2 cups paani dalkar dhakkan dhaanp dijiye. Paanch se chhe seeti (5-6 whistles) aane tak pakaiyye ya pandrah minute (15 min) tak dheemi aanch par pakaiyye ke dal achhi tarah se gal jaaye.

6. Gosht ko tel chhootne tak aur paani sookhne tak bhuniye.Kaddu ke pieces is mein daliye.

7. Ek cup (1 cup) paani dalkar do seeti (2 whistles) aane tak pakaiyye.

8. Ek cup (1 cup) pakki imli ka gada khatta daliye.Teen cup (3 cups) saada paani (plain water) daliye. Dhakkan dhaanp dijiye.

9. Pandrah minute (15 min) tak pakaiyye.

10. Jab daal achhi tarah se gal jaaye, aanch band kar dijiye.Is daal mein aadha cup (1/2 cup) paani dalkar, ghont lijiye aur bareek paste bana lijiye.

11. Jab khatta pak jaye, is mein dal ka paste daliye.

12. Dedh teaspoon (1 1/2 teaspoon) bareek namak daliye.

13. Garam masala powder, kariyapath, kata hua hara dhaniya aur sabith hari mirchein dalkar dhakkan dhaanp dijiye.

14. Dheemi anch (low flame) par das minute (10 min) tak pakaiyye.

Hyderabadi Kaddu Ka Dalcha tayyar hai. Baghara khana aur Sem ki Phalli Aalu Gosht ya Saade Chawal (plain rice) aur Aalu Gosht ke saath serve kijiye.
